For this Aardbei, we macerated local, handpicked strawberries and macerated and matured them on an oak barrel for almost five months on 18-month old lambik. We then blended with three-year old lambik right before bottling. The weighted average age of the blend before bottling was more than 20 months. The final fruit proportion is 488 grams of strawberries per litre of Aardbei. All three lambikken used were brewed by ourselves and more than 65% of the grain bill was sourced within our own Cereal Collective.
