A traditional Icelandic smoked cider made in cooperation with our friends, Matt and Aurora, of Fimbul PDX, a pop-up restaurant in Portland. They just up and moved to Iceland to run a restaurant there, but we were excited to release this before they left.
This cider starts with our spent Quince mash that M&A took home and smoked with dung and hay, upon it’s return, it was left to seep and ferment in fresh apple juice then barrel aged in chestnut.
