In years past, our small crop of grapes was decimated in a single night by a group of mischievous raccoons who left muddy footprints on our grape trellises. For this 2023 release, a carbonic maceration of estate-grown Concord grapes was blended with an open-fermented saison and aged in stainless steel for one month. This beer was then aged in a French oak barrel for four months before bottle conditioning with Brettanomyces.
