Using CRISPR/Cas9 technology, scientists have activated an existing gene in brewer’s yeast
that allows the yeast to biotransform higher quantities of aromatic thiols. There are no kettle,
whirlpool or dry-hops in this beer… Using only our estate-grown Cascade hops in the mash,
Skagit Valley barley, wheat and buckwheat malts, and a “thiolized” yeast, we created this
nutty, grassy, dry blonde ale with notes of white grape and passion fruit.
