Brewing scientists have identified the source of everyone’s favorite fruity aromas: thiols!
Using CRISPR/Cas9 technology, scientists have activated an existing gene in brewer’s yeast
that allows the yeast to biotransform higher quantities of aromatic thiols. Mash-hopped with
estate-grown Cascade, kettle-hopped with Cashmere and Centennial, and fermented with a
“thiolized” yeast for underlying notes of citrus, pineapple, mango and dankness.
