When I brewed V1 of Hop Soup a year or so ago, I had always had the intention of using that brand as a platform to try out new and exciting products and attempt to create a hop saturation experience for the consumer regardless of style being brewed. Version 1 was a very nice Hazy IPA, but the more I dove into the sensory of the beer the flabor profile was screaming WCIPA! So for version 2 I decided to make a few tweaks to the hop ratios, completely alter the water chemistry, yeast selection, and fermentation schedule to create this extremely saturated, Juicy, firmly bitter, and clean TDH WCIPA. With a total hop bill pushing over 8 pounds per barrel, this is in the ballpark of BreakThru’s DDH single IPAs and I’m confident on one in the Seattle area is (admittedly probably stupid enough to) using hops at this rate for this style of beer. Already in conditioning I’m getting huge notes of lush blueberry, mango sorbet, and dank hop resin followed by an acidic passionfruit note. I couldn’t be more excited to share this “new” style of WCIPA from BreakThru with you all!
