Rufus started with a foeder-aged base beer built on a malt bill comprising Chocolate, Maris Otter, Wheat, and LINC Malt’s Baronesse Vienna alongside a handful of rolled oats for an added silky texture. We then added cocoa nibs to boost the chocolate profile already present in the grains. The result is a smooth, robust-yet-dry stout.
