For this batch of Cathedral we used a really decadent malt from The Cologne region of Germany and a touch of wheat malt. It was hopped with German Spalter Select and French Strisselspalt hops then fermented with a yeast strain that also originated in Cologne Germany. This is our favorite batch of this beer yet and we hope you enjoy it as much as we do.
