Swan was brewed with Francin Pilsner Malt from Skagit Valley Malting, along with Malted Wheat and Flaked Oats. It was lightly hopped with whole leaf Citra and Saaz, and fermented in stainless with our favorite Lager strain. After cold conditioning in stainless, it was transferred in to oak where it went through a secondary fermentation with Brettanomyces for 14 months. It was then dry-hopped in oak with Styrian Golding and Citra
