The third in our Empire of Oak series, is a blend of two foeder-aged ales, dry-hopped with Ekuanot hops. The first ale was fermented with 2 strains of Saccharomyces yeast and a secondary fermentation of 4 Brettanomyces strains before being combined with second ale that was fermented with a Lachancea species. The Ekuanot hops enhance a delightfully balanced acidity with notes of strawberry, blackberries, and raspberries.
