This unpretentious easy drinker is meant more for the table than for a wine cellar. It is a co-
fermentation of Cab-Franc & Pinot Noir. This is our little French Bistro wine that is ready to
drink now while it’s full of energy and verve. The cabernet franc is from an organically farmed
vineyard near the Dalles planted at 500 feet in elevation under the flood levels. It has a distinct
brambly and herbal nature.
In the cellar: This wine starts out with carbonic maceration until about half-way through
fermentation. We then ferment it in open top fermenters with daily pigeage for 7 days before
pressing still sweet. It finished fermentation off the skins in stainless steel before aging in
neutral oak for 10 months. The result is bright and fresh yet structured and balanced with fruit
and verve. It is inspired by the Loire Valley’s Bistro Wines where they blend cab franc with
other varietals and are shipped up the river to the bistros of Paris. Bright, primary, and fun, this
Vin de Soif has the energy of a puppy.
