Washington Wizzle TriticaleWine is a project in coordination with @lincmalt out of Spokane and features Palouse grown base and specialty malt in tandem with a hefty dose of triticale (a wheat/rye cross) grown by Maya Jane Wahl in Ritzville, WA and was hopped exclusively with Chinook from Roy Farms in Moxee, WA. After a 24 hour boil the beer was fermented with our house English Ale yeast strain and fermented fully before resting for over 2 years in two TOTAL bourbon barrels, one an Elijah Craig 18yr and the other an Elijah Craig Double Oaked barrel. We then hand bottled a total of 34 cases (only 408 bottles) in 500ml bottles and left it to bottle condition for 2 months.
The end result is freaking fantastic! Notes of warm apple pie spices, rich decadent toasted bourbon oak, and a moderate to low carbonation profile that keeps a soft head but retains the barleywine’s style by keeping a full mouthfeel.
