A blend of oak aged, tart saison selected for bright, clean acidity transferred to stainless to referment on Brightstar peaches from the Okanogan valley. We then transferred it off peaches, and bottle/keg conditioned it with brettanomyces for 10 months before release. Balanced, nuanced and full of life, with a subtle fruit expression.
