A special beer made with the stones of cherries, deities unto themselves among brewers. We used the cherries first macerated with Fléchette, our kriek-inspired first release. Baetylus began life as a saison, and spent months breaking down and absorbing the subtle character of these second use cherry pits and skins before bottle and keg conditioning with our favorite strain of brettanomyces. It’s made for the hopeful, warm days of spring, and clocks in at a modest 4.5%. It’s crisp, dry, ever so slightly tart and layered with spice and bright fruit.
