Letting Serrano ripen to redness not only makes it eye catching but renders a nice balance of spicy and sweet. It ends up developing more capsaicin and slightly fruitier notes. With flavors similar to tomato and sriracha, it brings a subtle umami flavor to any dish. Although mild in heat, it does not lack in taste and uniqueness!
The name Serrano means “from the mountains” because that is where the tend to grow best. Originating from Mexico they are a staple in almost all Mexican plates but also have known to make appearances in Southeast Asian cuisine.
