Halcyon IV (4%) is the 4th rendition of this ongoing series of beers in collaboration with Hudson Valley Brewery. This Hoppy Witbier brewed with raw wheat, coriander, lemon zest and Citra hops is magically simple, soft and fluffy all while maintaining plenty of flavor and complexity. For this one we took the base of the infamous HVB Pillow Hat IPA, added coriander and Citra in the Whirlpool at cooler-than-typical temps (for less bitterness), fermented it with Belgian White Ale yeast, then added lemon zest and more Citra hops post-fermentation.
