Special Herbs follows no stylistic framework, instead being freely
structured with a focus on ingredient interplay. Triticale, orange,
pomelo, lemongrass, hyssop, and sansho peppercorn combine with
a mix of barrels, creating a profile that draws from saison,
kombucha, gruit, and other herbal beverages. This 2021 vintage
was fermented by three special yeast strains and introduced a
unique pinot noir barrel finished gin cask, showing a lovely
aromatic profile of earthy pu’er and bright citrus.
