This beer is over two years in the making, melding various fermentation traditions. An austere fermentable bill was inspired by Belgian Tripel, including house-made invert Candi syrup. Like the gruits of old, we did not add any hops. Inspired by the lovely vermouths and amaros of Europe, we instead used a variety of herbs and spices to add bitterness and flavor components on the hot side. After extensive oak-aging and blending, we added further aromatic herbal components before packaging.
