We find that bittersweet apples make for a richer, more textured cider. The Dabinett in this blend brings that character, and the tart acidity of the Rhode Island Greening balances it perfectly. It was natively fermented and aged in old french oak barrels for 10 months before being can conditioned to add bubbles.
